Baby, I Love Hugh



Hugh being posh TV chef Hugh Fearnley-Whittingstall, in case you're wondering. His recipe for Mazzamurru (a Sicilian tomato and cheese gratin) published in Saturday's Guardian looked just the job for using up the remnants of the delicious Ciabatta loaf Jon made on Friday night.


Hugh's recipe gave qualities for 4, here's what I used to serve the two of us:


1 tablespoon olive oil
100g open textured, slightly stale bread
I x tinned tomatoes 
100g Mozzarella or a similar soft, creamy cheese (I used Brie)
A handful of finely grated hard cheese or Parmesan (I used a mature vegetarian Cheddar)
1 small white onion - peeled and chopped
1 clove of garlic - peeled and crushed
A bay leaf
A pinch of sugar
Sea salt and ground black pepper



Sweat the onion in the olive oil in a large frying pan (or in my case, the trusty wok I've had since I was 21) for 10 minutes until translucent.


Add the garlic and cook for a couple of minutes more.


Pour in the tinned tomatoes (crushing them first if you're using whole ones).


Add the bay leaf and a pinch of sugar & season with salt and pepper.


Bring to a simmer and then leave to cook on a very low heat for 20 minutes.


Taste and season if required.


Fill an oven proof dish (Hugh suggests a fairly deep 20 cm square one) with half the tomato mixture.


Add half the bread, cut into 1 inch slices. Press down into the sauce mixture, tearing to fit the dish if necessary.


Drizzle with a little olive oil and season.


Dot half the Brie (or Mozzarella) on top of the bread, add half the grated cheese and then repeat the process by layering the tomato sauce, bread slices, drizzled olive oil, seasoning and both cheeses.


Cook in an oven preheated to 180 °c /350°c /Gas mark 4 oven for 25 minutes.



Remove from the oven and allow to stand for 10 minutes (if you have the willpower) before serving with a crisp, green salad.


You know what, Hugh, it was delicious and I'm linking it to Ta-Tah Tuesday.

 Mazzamurru's going to be a regular addition to my repertoire from now on.

    That dish looks delicious! I am always on the hunt to find interesting (and fussy child) friendly receipes. Particularly vegetairian ones as we want to cut down on meat. And I do like Hugh FW as well! Bonus!

  19. Hugh's dish looks delish, I bet it tasted great too.
    I can't stand chefs that do overcomplicated dishes with umpteen ingredients of which half you can only procure at some extortionate delicatessen. This dish I could actually rustle up from things already in the house, brilliant. I made something really tasty the other day, Lidl were sellling butternut squash for cheaps, so I roasted thst together with sweet potatoes in a piri piri marinade, simple, hearty, cheap and oh so delicious my tastebuds did a little dance.

I have just made a cuppa and brought it and my laptop, and vegetarian cook book back with me so I could tell Duncan what to make for dinner.   27. You have my dream kitchen as well with the exposed brick, checkerboard floor, and vintage bits. My boyfriend sat across from Hugh at a vegan supper club that Hugh was filming for one of his shows. I was told Hugh spent all his attention on the woman with the low-cut blouse sitting next to him, but he seemed nice.
    You know I'm digging the vest as waistcoat look, the peacock print and of course the Bayeaux tapestry print.
    4 copies of Up the Junction? Then you really should re-read it.

  28. I would eat even tomatoes if cooked by you!! I adore them, but even if I became extremely allergic to them I'm sure that being your guest worths a visit to the ER!Your yellow blose enlights your tan and your smile and I like the fact that you are flawless even while you are in the kitchen!!
    By the way I've never noticed before that your kitchen is beautiful, I love the brick wall and the black and white floor very much!Every room of your house is breathtaking!!

    This one qualifies in my kitchen - everything I cook has to come up to the standards of my new kitchen plaque -

    But you do look delicious, darling, in your wonderful homemade top and tribute to 1066 and the weavers of Bayeaux! It is always a joy to peek inside your gorgeous home, and see you revealing your inner domestic goddess!
    Stir fry for us for tea - also quick and easy, my sort of cooking. But I would happily try Hugh's recipe too.

  42. That looks really tasty. I have the veggie book he did and there are so many nice looking recipes in it. His restaurant/cafe is not far from where I come from in the SW so I've been a couple of times. I had a really lovely lunch which was basically mushrooms on toast but it was lovely chunky bread and the mushrooms were done in thyme and there was cheese and olive oil and a crisp salad. He made something very simple into a really luscious dish. That's the kind of cooking I like.

  44. I saved this recipe page at the weekend from Guardian online and we've had it tonight using leftover gluten free bread that was falling apart, a tin of un-glam supermarket cheapy plum tomatoes and the last bit of stilton. It was bloomin delicious and the dogs loved it too.

  49. So timely, I've been sorting through recipes hurling out the complicated as I can't be bothered anymore (especially with a picky teen.) This is like lasagna, but with bread & much easier than making a red sauce, LOVE it! I wish our kitchen wasn't so odd, I would love to do it like yours. Sadly whenever I see HFW's name I am reminded of some scurrilous internet gossip about him which I probably shouldn't repeat but suffice to say you ALLEGEDLY wouldn't want to find him standing over you when you awake from your slumbers!
